4 large potatoes.
250 g of Segura Cured Ham in slices.
1 egg.
2 dl virgin olive oil.
Water.
Pepper.
PREPARATION:
Boil potato with skin intact until tender. Refresh and remove from burner to peel when cool. On the side, emulsify the egg with the water and olive oil to obtain a clear mayonnaise with which to achieve the gratin cream to brown the lasagna under the grill.
Fillet the potatoes and assemble the lasagna, alternating potatoes with Segura Cured Ham. Add gratin cream and cook au gratin in the oven on high until golden brown.
