Bitter salad with green grape emulsion and
Segura Cured Ham with three textures
INGREDIENTS (4 People):
½ Segura Cured Ham broth.
5 Slices of Segura Cured Ham.
3 Sheets of gelatin.
Bitter lettuce leaves (endive, lollo rosa, Batavia lettuce, maple leaf and chicory)
100 g of green grapes.
Extra virgin olive oil.
Pulp from one tomato.
Aromatic herbs to taste (oregano, parsley, basil).
PREPARATION:
Prepare gelatin the previous day You will have previously prepared the Segura Cured Ham broth from the ham hock (200 g), a carrot, a carrot stalk, a leek and a turnip. Simmer, apply and store. When it heats up to about 60º, add sheets of previously soaked gelatin sheets, apply and place in a mold that we will refrigerate to be able to cut the gelatin cubes the next day. Place some strips of Segura Cured Ham on a paper towel, then place in microwave on high for 3 minutes. You will then get crispy Segura Cured Ham.
Wash and strip lettuce and mix grapes. Emulsify with olive oil, tomato pulp and chopped herbs. Finally, arrange lettuce in a bouquet and season with dressing. Add Segura Cured Ham gelatin slices, the Segura Cured Ham strips and the crisps and decorate with cherry tomato slices.
