Cream of cauliflower with Segura Cured Ham meatballs

INGREDIENTS (4 People):


For meatballs:
300 g finely chopped Segura Cured Ham.
200 g breadcrumbs.
3 eggs.

For the cream:
One cauliflower.
One large potato.
2 dl milk.
Salt and pepper.

PREPARATION:
For the cream of cauliflower: strip the leaves off cauliflower and boil it in pieces with the potatoes and milk, cover with water for 35-40 minutes at medium heat (until tender). Add salt and pepper and remove from burner. Mix the chopped Segura Cured Ham with the breadcrumbs and eggs until a uniform batter is achieved.

Shape into nut-sized pieces and fry in abundant olive oil. Once fried and still hot, wrap each one with a strip of Segura Cured Ham and place on top of cream as shown in the photograph.
